Happy Friday, dear reader. Once again, my handy-dandy crockpot has saved the day for our evening meals. Between our project in the soap studio and The Bean dragging home influenza and a stomach virus, it has been a week. This week's recipe comes from my Fix It And Forget It cookbook, which I picked up in the '90s. It has four ingredients and is quite possibly the most convenient recipe in my collection of go-to recipes. It is a favorite in our family, and The Bean always asks why I don't make it more often.
Crockpot Chicken and Gravy
Ingredients:
1.5 lbs. Chicken breasts
2 14 oz. Cans Cream of Chicken Soup
2 Envelopes McCormack Chicken Gravy Mix
1 Cup of Water
-Place raw chicken breasts in the bottom of a crockpot
-In a medium bowl, mix the soup, gravy mix, and water until smooth
-Pour the mixture over the chicken
-Cook on low setting for six hours
-Before serving, take two forks and shred the chicken
-This is delicious served over waffles, biscuits, or mashed potatoes
I serve this with a side of honey-glazed carrots and a spinach salad. It is so easy I barely consider it a recipe. However, it is simple, delicious, and comforting after a long, busy day.
