Foodie Friday: Deviled Eggs

Happy Friday, dear reader. This weekend we will celebrate Easter. I feel I do Halloween, Thanksgiving, and Christmas pretty big. By the time Easter arrives, we are in the midst of baby season, preparing for the upcoming market season, and planning for our live show schedule. Spring and summer are a hectic time for us. This year marks the first time in quite a while that it will be just us for Easter. I usually have a gathering of friends, family, and random children here for Easter. I must admit, I'm looking forward to a quiet day with an easy meal and minimal fuss.
Our holiday meal will consist of ham balls because The Bibbed Wonder and The Bean don't care for ham. I'm serving homemade scalloped potatoes, roasted garlic carrots, deviled eggs, and gob cake for dessert. GramBarb and Jordan's boyfriend, Pook-A-Dook, are coming to dinner, and we plan to play card games afterward. There will still be babies to feed, goats to milk, and barn chores to do, but we will spend most of the day together in the house. I'm sure an afternoon nap will also be on the schedule.
Today, I thought I would share my easy recipe for deviled eggs. Over the years, I have tried various recipes, including spicy eggs, garlic and chive, bacon-topped, and buffalo deviled eggs. However, my crew prefers easy, simple deviled eggs with Miracle Whip and paprika. With the overabundance of eggs from our backyard flock, we could have deviled eggs every day. This is a simple and delicious way to use a lot of eggs at once. I also have a pretty deviled egg plate with a bunny on it. Having pretty dishes to serve simple sides makes the effort worthwhile.
There is always great debate over the use of mayonnaise or Miracle Whip in our house. The Bean and I prefer Miracle Whip. The Bibbed Wonder prefers mayonnaise, specifically Hellmann's. In my opinion, eating mayonnaise is like eating a salty, slimy, almost flavorless goober. Because The Bean sides with me, we outvote The Bibbed Wonder on the issue. I prefer to use a piping bag to fill the eggs with the filling. I think it looks pretty and festive. However, my mom and grandmothers always spooned the filling into the center. You do whatever makes you happy. If you celebrate the holiday, I hope you have a wonderful day doing something you enjoy with people you love, and filled with delicious food.
Simple Deviled Eggs
Ingredients:
1 dozen eggs, hard-boiled
1 cup Miracle Whip
Salt and pepper to taste
Paprika to sprinkle on top
Directions:
Hard-boil your eggs for ten minutes. Let the eggs cool and then peel them.
Cut each egg in half long ways.
Pop out the yolk and place the yolk in a medium bowl. Rinse all the yolk from the egg white and place it on a plate.
Mash the egg yolks with a potato masher or the back of a fork.
Add the salt, pepper, and Miracle Whip.
Using an electric mixer, beat the yolk mixture until smooth.
Scoop the egg yolk mixture into a piping bag and pipe into the holes of the egg whites. You can also use a small spoon to fill the eggs.
Sprinkle the tops of the filled eggs with paprika.
Cover lightly with Cling Wrap and refrigerate until ready to serve.
